Greetings everybody! I finished Kathi Lipp’s book last week and did some bulk shopping and meal planning in preparation for this week. I am one of several bloggers taking Kathi’s What’s For Dinner Solution Blogger Challenge.
One of the themes of the book is that planning is key to reducing the stress of figuring out dinner each night. In considering my menu, I though about what I had on hand, what was on sale at the market and making sure we had a good variety of meals.
Once I started writing out my menu plan I found that it was actually easy. Here’s what I’ll be cooking from today through the end of the month:
Monday – Whole Roasted Chickens (Part 1 of a LOOP meal)
Tuesday – Split Pea Soup, Home made bread
Wednesday – Chicken Enchiladas, Mexican Rice (Part 2 of a LOOP meal)
Thursday – Home made Pizza
Friday – Chili Verde Pork , Leftover Rice & Beans
Saturday – Spaghetti & Meatballs, Salad
Sunday – Burgers & Fries
Monday – Potato & Cheese Taquitos
Tuesday – Chicken Marsala
Wednesday – Baked Pasta (plus extra for freezing)

The chili verde & the taquitos have my interest & can’t wait for the recipes!
I’ve had success with the chili verde before, but the taquitos are an experiment. Our friend Maria makes super yummy potato and cheese taquitos so I’m going to try to replicate them! Thanks for stopping by the blog!
